I like cooking, but I really don't like coming up with dinner menus. Every now and then I'll crave a certain dish and that makes things easy. I'll just make what I'm craving. The other nights though...that's when it gets tough.
While I was at CVS the other day, I picked up a Cooking Light magazine to flip through while waiting for my prescription. I ended up purchasing it and then making Sautéed Chicken with Sage Browned Butter for dinner the next night. I mean, who doesn't love browned butter?!? Turns out it was a super easy dish and pretty good too. That is now my new thing. Should be easy, but still good.
After one recipe down, I decided that I'd just start making recipes one after one out of the magazine instead of having to even think about what to make. Regardless of what it was. With that in mind, next up...Ma Po Tofu with some steamed brocollini. Just ask my family, I do not normally eat tofu. BUT with an interest in eating healthier, this was recipe #2. It even tasted mostly like something I would eat at home with my parents. Mostly!
Recipe Three was another quick and easy one for broiling up some Salmon and Bok Choy. I have to say, that I'm loving all these quick prep meals. So far, we're three for three with recipes from this magazine. Ryan and I figured we'd aim for making dinner at home 4 nights a week and this one will definitely be one we can make when we need an easy one.
Number Four for the week was another seafood dish. Not from Cooking Light, but still along the lines of something relatively simple - Spicy Baked Shrimp. A few weeks back, Ryan was in New Orleans and brought me back some cajun seasonings. Figured it was time to break out that spice jar. Shrimp, Spice, and toasted French Bread...to sop up all that cajun goodness.
So that was 4! Here's to continuing 4 healthy, but still tasty at home meals a week!
